preheat oven to 350-375 degrees . grease baking sheet.
In large bowl, stir 2 + 2/3 cups flour. Two tsp. cream of tarter, One tsp. baking soda, 1/2 tsp. salt. and 1/4 tsp nutmeg...Set aside.
In another bowl: using elec mixer on medium speed beat the butter, sugar and corn syrup til well blended and fluffy:
Two stix butter
One and three fourth cups white sugar
One and a half tablespoon light corn syrup

Then Add Two [2] lrg. eggs.
Two and a half tsp vanilla
One and a half teaspoons pure vanilla
mixing well agin.
Now Mix in half of the flour you have set aside also mixing well...before stirring in the additional flour mix, or until just firmed up
Stir in remainder of flour...chill for a bit. Use two teaspoons one in each hand to scoop and portion out balls for rolling. This can be done at once.
In a shallow bowl filled with one fourth cups sugar, one and a half tsp. ground cinamon, mixed well for the 'do balls' to be rolled before baking and placed on cookie sheet. It is a good idea to make all the balls, then do the rollin-on of sugar. Some can be set aside to bake on a different day. i like to make up one pan so they're always fresh.
bake Eight [8] to [11] eleven minutes cool slighty before removing or if you are able use the professional paper for easy and quick removal.. the pp. sheets can be reused somewhat. Saves washing on pans too.
